Passion Fruit Cheesecake Recipe

Ingredients

For Crust:

  • 5 tablespoons butter, melted
  • 1 1/4 cup tea cookies, crushed
  • 1/2 cup white chocolate chips
  • 1/2 cup cream
  • 1 package (8 ounces) cream cheese, softened
  • 1 package (8 ounces) mascarpone
  • 1/4 cup sugar
  • 3 eggs, separated
  • 1/2 cup passion fruit

For Glaze:

  • 1/4 cup sugar
  • 1 tablespoon cornstarch mixed with 1/3 cup water
  • 1 cup passion fruit pulp, pureed

Method

  1. Preheat oven to 300F
  2. In a medium bowl, combine cookie crumbs and butter
  3. Press into the bottom of a greased 9 inch springform pan
  4. Chill for 1 hour
  5. In a small saucepan or in the microwave, melt white chocolate with cream
  6. Remove from heat
  7. In a large bowl, beat cream cheese, mascarpone, egg yolks and sugar until smooth
  8. Stir in white chocolate mixture and passion fruit
  9. In a separate bowl, whisk egg whites until peaks form
  10. Fold into batter
  11. Pour into crust
  12. Place cake pan in a baking dish filled with 1 inch of water
  13. Bake for 70 to 80 minutes, until center is almost set
  14. Cool in unheated oven completely
  15. Cover and chill overnight
  16. Bring all glaze ingredients to a boil, stirring continuously until thickened
  17. Cool and pour over cheesecake
  18. Chill for 2 hours
