Keto Cheesecake Recipe
Ingredients
- 3 packages (8 ounces) cream cheese, softened
- 1 cup extra-fine whole milk ricotta cheese
- 1/2 cup sour cream
- 1 1/2 cups sugar substitute
- 1/3 cup heavy cream
- 1 tablespoon no sugar added vanilla extract
- 1 tablespoon fresh lemon juice
- 2 eggs
- 3 egg yolks
Method
- Preheat oven to 400F
- In a large mixing bowl, beat cream cheese, ricotta, sour cream and sugar substitute
- In a separate bowl, whisk together heavy cream, vanilla, lemon juice, eggs, and egg yolks until blended
- Pour mixture into cream cheese mixture and beat until just combined
- Pour batter into a lightly greased 9 inch springform pan
- Place cake pan in a baking pan filled with 1 inch of water
- Bake for 15 minutes
- Lower temperature to 275F and bake an additional 90 minutes, until top is slightly golden
- Cool in unheated oven for 3 hours
- Cover and chill overnight
