Pan-Fried Spuds Recipe

Ingredients

Makes 4 servings

  • 3 tablespoons olive oil
  • 1 small yellow onion, minced
  • 1 small red bell pepper, chopped
  • 3 leftover baked potatoes, peeled and cut into 1/2-inch dice
  • 1/2 teaspoon sweet or smoked paprika
  • salt and freshly ground black pepper

Method

  1. In a large skillet, heat the oil over medium heat
  2. Add the onion, cover and cook until softened, about 5 minutes
  3. Add the bell pepper and cook for 2 minutes to soften slightly
  4. Add the potatoes and paprika and season with salt and pepper
  5. Cook until nicely browned, turning occasionally, about 15 minutes
  6. Serve hot
