Oven-Puffed Lobster And Brie Custards Recipe

Ingredients

Serves 6

  • 6 large eggs
  • 3/4 cup heavy cream
  • 1/2 cup half-and-half
  • 2 tsps. chopped fresh dill
  • 1/2 lb. cooked Maine lobster meat (about one 1 1/2 lbs. lobster), coarsely chopped
  • 1/4 lb. brie, cut thinly into 1-inch pieces

Method

  1. Preheat the oven to 400 degrees F
  2. Butter 6 individual custard cups or ramekins, place onto a baking sheet and set aside
  3. Whisk together the eggs, heavy cream and half-and-half in a large mixing bowl
  4. Stir in the dill
  5. Fill each of the cups half full with the egg mixture
  6. Divide the lobster and brie evenly among the cups
  7. Top each cup with the remaining egg mixture
  8. Bake until puffed and just beginning to brown, 15-20 minutes
  9. Serve immediately
