Orzo Tomato Sauce Recipe

Ingredients

  • Serving Size : 4
  • 4 cup water
  • 1/2 pound ripe tomatoes, peeled – 1/2″cub
  • 1 salt to taste
  • 1 fresh ground pepper to taste
  • 3/4 cup orzo
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoon olive oil
  • 2 tablespoon fresh basil, shred – loose pack
  • 1 teaspoon garlic – finely minced

Method

  1. Bring water to a boil in a saucepan and add salt to taste.
  2. Add orzo and cook, stirring briefly,10 minutes or until tender.
  3. Do not over cook.
  4. Drain.
  5. Meanwhile, heat oil in a sauce pan and add garlic.
  6. Cook stirring.
  7. Do not brown.
  8. Add tomatoes and sprinkle with salt, pepper and pepper flakes.
  9. Stir and bring to a boil.
  10. Add orzo and basil.
  11. Stir to blend, and serve.
  12. Makes 4 servings.
