Mediterranean Crock Pot Rice Paella Slow Cooker Recipe
Ingredients
- 1½ cups of the long grain brown rice ½ lb. sausage
- 1 onion
- 1 green pepper
- 4 garlic cloves, crushed
- 1½ lbs. of chicken (boneless skinless chicken breast)
- 1 lbs. of medium shrimp
- 1 can of Rotel tomatoes
- ½ tsp of Turmeric
- ¼ tsp of Paprika
- 1½ cup of chicken broth
- 2 tsp of salt
- 1 bag of frozen peas
Method
- Place the sausages in a skillet and brown well
- Toss in all the ingredients into the crock pot excluding the shrimp
- Cook for 4-5 hours on low until the grains of rice are soft and tender ensuring not to overcook
- During the last 20 minutes of cooking add the shrimps and combine well
- Serve warm
