Low Fat Sweet-Potato Pierogis Glazed With Raisins Pineapple Oranges Recipe
Ingredients
28 ounces Sweet-Potato pierogies, 2 packages
12 ounces crushed pineapple in juice
1/2 cup raisins
1/2 cup packed brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 teaspoon cornstarch
11 ounces mandarin oranges, drained, with liquid reserved
Method
In large saucepan, over high heat, thaw frozen pierogies in boiling water for 5 minutes.
Drain and set aside.
Keep warm.
In large saucepan, over medium heat, stir together pineapple, raisins, brown sugar, cinnamon and cloves.
Bring to a boil.
Combine mandarin orange liquid with enough water to make 2 cups.
In small bowl, whisk together cornstarch and orange-water mixture.
Add to saucepan.
Heat until pineapple mixture reaches the desired consistency for a glaze.
Stir in oranges, pour over pierogies and serve.
