Low Fat Lemon Bars Recipe
Ingredients
1 cup all-purpose flour
1/2 cup firmly packed brown sugar
1/4 cup granulated sugar
1/2 reduced-fat margarine
1 cup old-fashioned oats, or quick-cooking oats
nonstick cooking spray
8 ounces fat-free cream cheese, softened
1 egg
1/4 cup lemon juice
1 tablespoon grated lemon peel
Method
Preheat oven to 350°F
In medium bowl, blend flour and sugars; cut in margarine until mixture resembles coarse crumbs.
Stir in oats.
Reserve 1 cup crumb mixture, pressing remaining crumbs onto bottom of 9-inch-square baking pan sprayed with nonstick cooking spray.
Bake 20 minutes.
In small bowl, with electric mixer on medium speed, beat cream cheese, egg, lemon juice and peel until well blended.
Pour over baked crust; sprinkle with reserved crumb mixture.
Bake 25 minutes longer.
Cool.
Cut into bars.
Makes 16 servings.
