Low Fat Hot Fudge Pudding Recipe

Ingredients

  • 1 cup flour
  • 1/3 cup sugar
  • 1/4 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup 1% low-fat milk
  • 1 large egg, lightly beaten
  • 2 tablespoons canola oil
  • 1 teaspoon vanilla extract
  • 3/4 cup brown sugar
  • 1 1/3 cups coffee, hot and strong
  • Method

  • Preheat oven to 375 degrees.
  • In a large bowl stir together flour, sugar, cocoa, baking powder and salt.
  • In measuring cup combine milk, egg, oil and vanilla.
  • Make a well in center of dry ingredients and gradually pour in milk mixture, stirring until combined.
  • Spoon into a lightly oiled 8X8 baking dish.
  • Spread evenly.
  • Dissolve brown sugar in coffee and spoon carefully over batter.
  • Bake for 25 mins or until a toothpick inserted in center comes clean
  • Let stand for 10 mins.
  • Serve hot or warm.
