Low Fat Chicken Breasts With Lemon And Caper Sauce Recipe

Ingredients

  • 4 boneless skinless chicken breast halves, about 1 1/4 pounds , 1/4 cup all-purpose white flour
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon olive oil
  • ***SAUCE***
  • 1/3 cup chopped shallots
  • 1/3 cup dry white wine or fat-free chicken broth
  • 1/4 cup lemon juice
  • 3 tablespoons drained capers

Method

  1. To flour and cook chicken breasts, follow Basic Recipe.
  2. Reduce heat to medium-low.
  3. Add shallots to the skillet and stir until they are lightly browned, about 1 minute.
  4. Add wine, lemon juice and capers.
  5. Bring the sauce to a simmer and cook about 3 minutes, or until it has reduced and thickened slightly.
  6. Spoon the sauce over the chicken breasts.
