Low Fat Breakfast Burrito Wraps Recipe
Ingredients
- 8 slices turkey bacon
- 1 medium onion, chopped
- 1 medium red pepper, chopped
- 2 cups egg substitute
- 8 flour tortillas, heated per package directions
- 1 cup reduced-fat Monterey Jack Cheese, Toppings,, optional
- fat-free sour cream
- salsa
- shredded lettuce
- diced tomato
Method
- Cook bacon in large non-stick frying pan; drain and crumble.
- In same pan, cook onion and pepper until tender, about 5 minutes.
- Remove and set aside.
- Cook eggs over medium heat without stirring until eggs begin to set.
- Continue to stir gently and allow to set until cooked.
- Add bacon and vegetables to eggs.
- Spoon mixture onto tortillas; top with cheese.
- Fold or roll tortillas.
- Serve with toppings, if desired.
- Makes 8 servings.
