Ingredients
- 1½ cups (240 g) sliced onions
- 2 tbsps (28 ml) olive oil
- 1 4 L water
- 1 cup (192 g) lentils, sorted, washed, and drained
- 380 g brown rice, washed and drained
Method
- Place onions in nonstick skillet with olive oil
- Saute over medium heat until onions are golden brown
- Remove about ½ cup (80 g) from skillet and place on paper towel to drain
- Place remaining onions and drippings in slow cooker
- Combine with water, lentils, and brown rice
- Cover and cook on low 6 to 8 hours
- Garnish with reserved onions
- Yield: 8 servings
- Per serving: 257 g water; 125 calories (28% from fat, 12% from protein, 60% from carb
