Lentil Sweet Potato Soup Indian Recipe
Ingredients
- Serves: 4
- 1 1/2 cups brown lentils
- 1 large sweet potato, cut into 1/2 inch cubes
- 6 cups vegetable broth
- 1 cup coconut milk
- 1/2 tbsp chili paste
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1/2 tbsp ginger, grated
- 2 tsp ground cumin
- 1 tsp garam masala
- 2 tsp lime juice
- 1/4 cup fresh cilantro, chopped
- 14 oz can tomatoes, diced
- pepper.
- salt.
Method
- Add all ingredients except tomatoes and lime juice into the slow cooker and stir well.
- Cover and cook on low for 6 hours.
- Stir in tomatoes and lime juice.
- Cook soup for another 10 minutes to blend the flavors.
- Season with pepper and salt.
- Serve warm and enjoy.
