Keto Sopa Aguacate Recipe

Ingredients

  • 1 quart (960 ml) chicken broth
  • 1 ripe black avocado
  • 2 scallions
  • 2 canned green chilies or 1 or 2 canned jalapenos, if you like it hot!
  • 2 tablespoons (8 g) chopped cilantro
  • 1/2 teaspoon salt

Method

  1. Start heating the broth-you can put it in a pan on the stove or you can put it in a large microwaveable container in the microwave
  2. While the broth is heating, scoop the avocado out of its skin and into a food processor with the S-blade in place
  3. Add the scallions, chilies, cilantro, and salt
  4. Pulse to chop everything together- you can leave a few chunks of avocado or puree it smooth, whichever you prefer
  5. When the broth is hot, divide the avocado mixture between 4 smallish soup bowls
  6. Ladle the hot broth over the avocado mixture and serve

Makes 4 servings

  1. Each with 6 grams of carbohydrates and 3 grams of fiber, for a total of 3 grams of usable carbs and 6 grams of protein
