Keto Mascarpone Fat Bombs Recipe

Ingredients

Serves: 10.

  • 1/3 cup mascarpone cheese
  • 1/3 cup unsweetened coconut flakes
  • 1/3 cup coarsely chopped walnuts and/or pecans
  • 1 tablespoon Truvia

Coating:

  • 4 tablespoons butter
  • 2 tablespoons heavy white cream
  • 2 tablespoons unsweetened cocoa
  • 2 tablespoons Truvia

Method

  1. In a medium bowl, mix the mascarpone, coconut flakes, nuts and sweetener together.
  2. Mix well and shape the mixture into small balls.
  3. Place on a plate lined with parchment and place in the fridge.
  4. Meanwhile, prepare the coating.
  5. Combine the butter and heavy cream in a bowl and microwave for 30-35 seconds, stirring once halfway through.
  6. Stir in the sweetener and cocoa and mix until well combined.
  7. Remove the chilled balls from the fridge and thoroughly coat with the prepared cocoa mixture.
  8. Return back to the fridge and let them chill for another 15-20 minutes.
  9. Keep stored in the refrigerator.
