Keto Easy Vegan Chia Pudding
Ingredients
Yield: 1 serving
- ¾ cup (180 ml) unsweetened coconut milk or other nondairy milk of choice
- 3 tablespoons (30g) chia seeds
- ¼ teaspoon vanilla extract
- 8 to 10 drops liquid stevia (optional)
Suggested Toppings.

Method
- Put all the ingredients in a jar that holds at least 8 fluid ounces (240 ml)
- Secure the lid tightly and shake until well combined
- Let the mixture sit for 10 minutes, until the chia seeds have absorbed almost all of the coconut milk
- Stir to break up any clumps, top with berries or coconut flakes, if desired, and enjoy
- Refrigerate in a tightly sealed jar for up to 3 days
