Keto Cauliflower Avocado Salad Recipe

Ingredients

  • 4 cups (600 g) cauliflower
  • 1 black avocado, peeled and diced 1/2 green bell pepper, diced
  • 8 kalamata olives, pitted and chopped
  • 4 scallions, thinly sliced, including the crisp part of the green shoot

Sun-Dried Tomato-Basil Vinaigrette.:

Method

  1. Put it in a microwaveable bowl, add 1 tablespoon (15 ml) of water, and cover
  2. Microwave on high for 7 minutes
  3. When the cauliflower is ready, drain it and dump it in a mixing bowl
  4. Add everything else, including the Sun-Dried Tomato-Basil Vinaigrette, and toss
  5. Serve warm on a bed of lettuce

Makes 6 servings
