Ingredients
Yield: 4 servings
- 1 recipe Creamy Hemp Sauce (see Creamy Hemp Sauce)
- 6 cups (600g) cauliflower florets
- ½ cup (60g) raw pepitas (pumpkin seeds)
- ground black pepper
- 2 scallions (green parts only), sliced
Method
- Preheat the oven to 375°F (190°C) and grease a 13 by 9-inch (33 by 23-cm) baking dish
- In large mixing bowl, mix together the sauce, cauliflower florets, and pepitas
- Transfer the mixture to the greased baking dish and season with pepper
- Bake for 35 minutes, until the cauliflower is tender and the cauliflower is just starting to turn golden brown on top
- Remove from the oven and top with the sliced scallions before serving
- Refrigerate in a tightly sealed container for up to 3 days or freeze for up to a month
- To reheat – Place in a preheated 300°F (150°C) oven for 10 to 15 minutes (or 25 to 30 minutes if frozen), until warmed through
