Keto Best Cauliflower Bake Recipe

Ingredients

Yield: 4 servings

  • 1 recipe Creamy Hemp Sauce (see Creamy Hemp Sauce)
  • 6 cups (600g) cauliflower florets
  • ½ cup (60g) raw pepitas (pumpkin seeds)
  • ground black pepper
  • 2 scallions (green parts only), sliced

Method

  1. Preheat the oven to 375°F (190°C) and grease a 13 by 9-inch (33 by 23-cm) baking dish
  2. In large mixing bowl, mix together the sauce, cauliflower florets, and pepitas
  3. Transfer the mixture to the greased baking dish and season with pepper
  4. Bake for 35 minutes, until the cauliflower is tender and the cauliflower is just starting to turn golden brown on top
  5. Remove from the oven and top with the sliced scallions before serving
  6. Refrigerate in a tightly sealed container for up to 3 days or freeze for up to a month
  7. To reheat – Place in a preheated 300°F (150°C) oven for 10 to 15 minutes (or 25 to 30 minutes if frozen), until warmed through
