Keto Avocado Cucumber Pinwheels Recipe

Ingredients

Yield: 2 servings (6 to 8 pieces per serving)

  • 1 medium Hass avocado (7½ ounces/212g)
  • 2 sheets sushi nori
  • 2 tablespoons (20g) sesame seeds
  • ½ cup (50g) thinly sliced cucumbers
  • ½ cup (30g) broccoli sprouts

Dipping Sauce Suggestions.

  • low-sodium tamari or coconut aminos with sliced scallions (green parts only)
  • tangy avocado mayo (see Tangy Avocado Mayo)

Method

  1. Cut the avocado in half and remove the pit
  2. Scoop the flesh into a small dish and mash with a fork
  3. Lay each sheet of nori on a flat surface and spread half of the mashed avocado on each sheet, leaving 1 inch (2
  4. 5 cm) of space at the far end of each sheet
  5. Sprinkle a tablespoon of the sesame seeds over the avocado on each sheet
  6. Lay out half of the cucumber slices on each sheet and top each with half of the broccoli sprouts
  7. Wet the far edge of each nori sheet with a little water
  8. Starting at the edge closest to you, roll up the sheet into a roll
  9. Press gently along the seam to make sure the wet edge of nori is sealed up against the roll
  10. Slice each roll into 6 to 8 pieces (depending on your preference), running the knife under water before each cut
  11. Serve with the dipping sauce of your choice
  12. Refrigerate in a tightly sealed container for up to 2 days
