Spinach Coconut Lentil Soup Indian

Ingredients

  • Serves: 6
  • 4 cups fresh spinach, chopped
  • 14 oz coconut milk
  • 4 cups vegetable stock
  • 1 1/2 cup red lentils, rinsed and drained
  • 1 tsp ground cinnamon
  • 1/2 tsp garam masala
  • 1 tsp ground turmeric
  • 1 tsp ground coriander seed
  • 1 tsp ground cumin
  • 2 tsp garlic, minced
  • 1 large onion, chopped
  • 1 tbsp vegetable oil
  • pepper.
  • salt.

Method

  1. Heat oil in the pan over medium heat.
  2. Add onion to the pan and saute for 5 minutes or until golden brown.
  3. Add cinnamon, garam masala, turmeric, coriander, cumin, and garlic and cook for 2 minutes.
  4. Transfer onion-spice mixture into the slow cooker.
  5. Add lentils and stock into the slow cooker and stir well.
  6. Cover and cook on low for 4 hours.
  7. Add coconut milk and spinach.
  8. Stir well and cook for another 30 minutes.
  9. Season with pepper and salt.
  10. Serve and enjoy.
