Indonesian Avocado Smoothie Recipe
Ingredients
Makes 2 servings
- 1/4 cup sugar
- 1/4 cup water
- 1 teaspoon instant coffee
- 2 ripe Hass avocados, pitted, peeled and cut into chunks
- 1 1/4 cups chilled soy milk or other nondairy milk
- 1 cup crushed ice
- 1 cup chilled chocolate soy milk (optional)
Method
- In a small saucepan, combine the water, sugar and instant coffee over medium heat
- Simmer, stirring, until the sugar is dissolved
- Set aside to cool, about 15 minutes
- In a blender or food processor, combine the avocados, soy milk, reserved syrup and ice and blend until smooth
- Divide between 2 tall glasses and top each with 1/2 cup of the chocolate soy milk, if desired
- Serve immediately
