Impossible Cheesecake Recipe
Ingredients
- Serving Size : 8
- 3/4 cup sugar
- 1/2 cup Bisquick. baking mix
- 2 eggs
- 16 ounces cream cheese – cut in 1-inch cubes
- 2 teaspoons vanilla
- 1/2 teaspoon lemon peel – grated
- 1 cup sour cream
- 2 tablespoons sugar
- 2 teaspoons vanilla
Method
- Heat oven to 350 degrees.
- Grease 9″ pie plate.
- Place 3/4 cup sugar, baking mix, eggs, cream cheese, 2 tsp vanilla and lemon peel in blender container.
- Blend on high speed, stopping blender occasionally to stir, until smooth about 3 minutes.
- Pour into pie plate.
- Bake just until puffed and center is dry, about 30 minutes.
- Do not overbake.
- Mix sour cream, 2 tbsp sugar and 2 tsp vanilla.
- Spread carefully over top of cake, cool.
- Refrigerate until chilled, at least 3 hours.
- Serve with sweetened strawberries if desired.
