Ingredients

- 1/2 cup butter
- 1 1/3 cups sugar
- 6 Egg yolks
- 1 1/2 cups cold mashed potatoes
- 6 cups all-purpose flour
- 4 teaspoons cream of tartar baking powder
- 3 teaspoons double-acting baking powder
- 3 teaspoons salt
- 3 1/3 cups milk
- 6 Egg whites
- 1/2 cup sugar
- 1 tablespoon shortening
- 1/2 cup dry bread crumbs
Method
- Beat butter to soften it; gradually pour in sugar, creaming well together.
- Beat in egg yolks until mixture is light and fluffy.
- Stir in potatoes.
- Sift together flour, baking powders, and salt.
- Add to creamed mixture alternately with milk, beating well after each addition.
- Fold in egg whites.
- Using the 1 tbsp shortening grease baking pan, coat with bread crumbs.
- Pour batter into pan and bake at 350 degrees until done.
- Cool.
- Glaze as desired.
