Healthy Vegetable Coconut Curry Indian Recipe

Ingredients

  • Serves: 8
  • 1/4 cup cilantro, chopped
  • 1 cup green peas
  • 1 1/2 cups carrots, peeled and cut into strips
  • 14 oz can coconut milk
  • 1 oz dry onion soup mix
  • 2 bell pepper, cut into strips
  • 1/2 tsp cayenne pepper
  • 1/2 tsp red pepper flakes
  • 1 tbsp chili powder
  • 2 tbsp flour
  • 1/4 cup curry powder
  • 5 potatoes, peeled and cut into cubes
  • water as needed.

Method

  1. Add all ingredients into the slow cooker and mix well.
  2. Cover and cook on low for 4 hours.
  3. Stir well and serve.
