Autumn Squash Quiche

Autumn Squash Quiche

Ingredients

  • 2 acorn squash
  • 1 red onion, chopped
  • 1 cup chopped cooked turkey
  • 4 eggs
  • 1 tbsp pumpkin pie spice
  • salt to taste

Method

  1. Preheat your oven at 350 degrees F and put some oil over the quiche dish
  2. Put squash into a baking dish and then bake it in the preheated oven for one full hour before cutting this in half, removing seeds and scrapping the meat out in a bowl
  3. Combine squash, turkey, eggs, pumpkin pie spice, onion and salt together in a medium sized bowl before pouring this mixture into the quiche dish
  4. Bake in the preheated oven for about 45 minutes or until the top of the quiche is golden brown in color
