Autumn Squash Quiche
Ingredients
- 2 acorn squash
- 1 red onion, chopped
- 1 cup chopped cooked turkey
- 4 eggs
- 1 tbsp pumpkin pie spice
- salt to taste
Method
- Preheat your oven at 350 degrees F and put some oil over the quiche dish
- Put squash into a baking dish and then bake it in the preheated oven for one full hour before cutting this in half, removing seeds and scrapping the meat out in a bowl
- Combine squash, turkey, eggs, pumpkin pie spice, onion and salt together in a medium sized bowl before pouring this mixture into the quiche dish
- Bake in the preheated oven for about 45 minutes or until the top of the quiche is golden brown in color
