Green Beans Grape Tomatoes Recipe

Ingredients

Makes 4 servings

  • 1 pound green beans, trimmed
  • 2 tablespoons olive oil
  • 2 medium shallots, minced
  • 2 garlic cloves, minced
  • 1 cup ripe grape tomatoes, halved lengthwise
  • 1/2 teaspoon ground fennel seed
  • 2 tablespoons torn fresh basil leaves
  • salt and freshly ground black pepper

Method

  1. Steam the green beans until just tender, about 7 minutes
  2. Rinse under cold water and set aside
  3. In a large skillet, heat the oil over medium heat
  4. Add the shallots and garlic, cover and cook for 1minute
  5. Add the steamed green beans and cook, stirring occasionally, for 2 minutes
  6. Add the tomatoes, fennel seed, basil and salt and pepper to taste
  7. Cook until the heated through, about 2 minutes longer
  8. Serve immediately
