Ingredients
Makes 4 servings
- 1 pound green beans, trimmed
- 2 tablespoons olive oil
- 2 medium shallots, minced
- 2 garlic cloves, minced
- 1 cup ripe grape tomatoes, halved lengthwise
- 1/2 teaspoon ground fennel seed
- 2 tablespoons torn fresh basil leaves
- salt and freshly ground black pepper
Method
- Steam the green beans until just tender, about 7 minutes
- Rinse under cold water and set aside
- In a large skillet, heat the oil over medium heat
- Add the shallots and garlic, cover and cook for 1minute
- Add the steamed green beans and cook, stirring occasionally, for 2 minutes
- Add the tomatoes, fennel seed, basil and salt and pepper to taste
- Cook until the heated through, about 2 minutes longer
- Serve immediately
