Green Bean Soup Recipe

Ingredients

Makes 4 servings

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 large garlic cloves, minced
  • 1 1/2 cups cooked or 1 can cannellini beans, drained and rinsed
  • 1 1/2 cups cooked or 1 can dark red kidney beans, drained and rinsed
  • 5 cups vegetable broth or water
  • 1/4 teaspoon crushed red pepper
  • salt and freshly ground black pepper
  • 3 cups coarsely chopped stemmed Swiss chard
  • 3 cups coarsely chopped stemmed kale

Method

  1. In a large soup pot, heat the oil over medium heat
  2. Add the onion, cover and cook until softened, about 5 minutes
  3. Add the garlic and cook, uncovered, 1 minute
  4. Stir in the beans, broth, crushed red pepper and salt and black pepper to taste and bring to a boil
  5. Reduce heat to a simmer, uncovered and stir in the greens
  6. Continue to cook until the greens are tender, 15 to 20 minutes
  7. Serve hot
