Ingredients
Makes 4 to 6 servings
- 1 pound green beans, trimmed and cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 small yellow onion, finely chopped
- 1 1/2 cups chopped white mushrooms
- 2 garlic cloves, minced
- 2 cups plain unsweetened soy milk
- 1/2 teaspoon dried savory or thyme (optional)
- 1/2 teaspoon celery salt
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon cornstarch blended with 2 tablespoons water
- 1 (8-ounce) can fried onion rings
Method
- Preheat the oven to 375°F
- Lightly oil a 9 x 13-inch baking pan and set aside
- Steam the green beans until just tender, about 7 minutes
- Set aside
- In a large skillet, heat 1 tablespoon of the oil over medium heat
- Add the onion, cover and cook until softened, about 5 minutes
- Add the mushrooms and garlic and cook, uncovered, until softened, 3 to 4 minutes
- Continue to cook until any liquid evaporates
- Stir in the soy milk, savory, if using, celery salt, salt and pepper and bring to a boil
- Reduce heat to low, stir in the cornstarch mixture and continue stirring until thickened
- Remove from the heat and set aside
- In the prepared pan, combine the green beans and the sauce mixture until well blended
- Stir in half of the fried onions
- Cover with foil and bake until hot, about 20 minutes
- Uncover, top with the remaining fried onions and bake 15 minutes longer, until hot and bubbly
- Serve immediately
