Green Bean Casserole Recipe

Ingredients

Makes 4 to 6 servings

  • 1 pound green beans, trimmed and cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely chopped
  • 1 1/2 cups chopped white mushrooms
  • 2 garlic cloves, minced
  • 2 cups plain unsweetened soy milk
  • 1/2 teaspoon dried savory or thyme (optional)
  • 1/2 teaspoon celery salt
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon cornstarch blended with 2 tablespoons water
  • 1 (8-ounce) can fried onion rings

Method

  1. Preheat the oven to 375°F
  2. Lightly oil a 9 x 13-inch baking pan and set aside
  3. Steam the green beans until just tender, about 7 minutes
  4. Set aside
  5. In a large skillet, heat 1 tablespoon of the oil over medium heat
  6. Add the onion, cover and cook until softened, about 5 minutes
  7. Add the mushrooms and garlic and cook, uncovered, until softened, 3 to 4 minutes
  8. Continue to cook until any liquid evaporates
  9. Stir in the soy milk, savory, if using, celery salt, salt and pepper and bring to a boil
  10. Reduce heat to low, stir in the cornstarch mixture and continue stirring until thickened
  11. Remove from the heat and set aside
  12. In the prepared pan, combine the green beans and the sauce mixture until well blended
  13. Stir in half of the fried onions
  14. Cover with foil and bake until hot, about 20 minutes
  15. Uncover, top with the remaining fried onions and bake 15 minutes longer, until hot and bubbly
  16. Serve immediately
