Green Bean Bake With Crispy Leeks Recipe

Ingredients

Makes 4 to 6 servings

  • green bean bake
  • 1 pound fresh green beans, trimmed and halved
  • 2 tablespoons olive oil
  • 2 medium shallots, finely chopped
  • 2 garlic cloves, minced
  • 12 ounces white mushrooms, lightly rinsed, patted dry and cut into 1/4-inch slices
  • ¾ teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • 1/4 teaspoon ground nutmeg
  • 3 tablespoons all-purpose flour
  • 1/4 cup dry sherry
  • 1 cup vegetable broth, 1 cup soy creamer or plain unsweetened soy milk

Crispy Leeks

  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 leek, well rinsed, trimmed and halved lengthwise
  • 1/2 cup canola or grapeseed oil

Method

  1. Make the green bean bake: In a saucepan of boiling salted water, cook the green beans for 7minutes
  2. Drain and set aside
  3. Preheat the oven to 350°F
  4. Lightly oil a 10-inch square baking pan and set aside
  5. In a large skillet, heat the olive oil over medium heat
  6. Add the shallots and garlic and cook for 2minutes
  7. Add the mushrooms, salt, pepper, thyme, sage and nutmeg and cook, stirring occasionally, until the mushrooms release their liquid, about 5 minutes
  8. Stir in the flour and cook 3 more minutes
  9. Add the sherry and stir until smooth
  10. Stir in the vegetable broth and simmer an additional 5 minutes
  11. Reduce the heat to low and stir in the soy creamer
  12. Cook until the mixture thickens, stirring occasionally, about 5 minutes
  13. Remove from the heat and stir in the cooked green beans
  14. Transfer the mixture to the prepared baking pan
  15. Make the leek: Combine the flour, salt and pepper in a shallow bowl
  16. Set aside
  17. Cut leek in half lengthwise into long, thin strips
  18. Set aside
  19. In a large skillet, heat the canola oil until hot but not smoking
  20. Dredge the leek strips in the flour mixture, then add to the hot oil
  21. Fry the leek until crisp and golden, 1 to 2 minutes
  22. Remove from the oil and drain on paper towels and keep warm
  23. Cover the green beans with foil and bake until bubbly, about 20 minutes
  24. Remove from the oven, uncover and top with the fried leeks
  25. Return to the oven and bake 10 minutes longer
  26. Serve immediately
