Green Bean Bake With Crispy Leeks Recipe
Ingredients
Makes 4 to 6 servings
- green bean bake
- 1 pound fresh green beans, trimmed and halved
- 2 tablespoons olive oil
- 2 medium shallots, finely chopped
- 2 garlic cloves, minced
- 12 ounces white mushrooms, lightly rinsed, patted dry and cut into 1/4-inch slices
- ¾ teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried sage
- 1/4 teaspoon ground nutmeg
- 3 tablespoons all-purpose flour
- 1/4 cup dry sherry
- 1 cup vegetable broth, 1 cup soy creamer or plain unsweetened soy milk
Crispy Leeks
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 leek, well rinsed, trimmed and halved lengthwise
- 1/2 cup canola or grapeseed oil
Method
- Make the green bean bake: In a saucepan of boiling salted water, cook the green beans for 7minutes
- Drain and set aside
- Preheat the oven to 350°F
- Lightly oil a 10-inch square baking pan and set aside
- In a large skillet, heat the olive oil over medium heat
- Add the shallots and garlic and cook for 2minutes
- Add the mushrooms, salt, pepper, thyme, sage and nutmeg and cook, stirring occasionally, until the mushrooms release their liquid, about 5 minutes
- Stir in the flour and cook 3 more minutes
- Add the sherry and stir until smooth
- Stir in the vegetable broth and simmer an additional 5 minutes
- Reduce the heat to low and stir in the soy creamer
- Cook until the mixture thickens, stirring occasionally, about 5 minutes
- Remove from the heat and stir in the cooked green beans
- Transfer the mixture to the prepared baking pan
- Make the leek: Combine the flour, salt and pepper in a shallow bowl
- Set aside
- Cut leek in half lengthwise into long, thin strips
- Set aside
- In a large skillet, heat the canola oil until hot but not smoking
- Dredge the leek strips in the flour mixture, then add to the hot oil
- Fry the leek until crisp and golden, 1 to 2 minutes
- Remove from the oil and drain on paper towels and keep warm
- Cover the green beans with foil and bake until bubbly, about 20 minutes
- Remove from the oven, uncover and top with the fried leeks
- Return to the oven and bake 10 minutes longer
- Serve immediately
