Ingredients
Servings : 12 muffins.
- 2 tablespoons ground flax seeds
- 4 tablespoons cold water
- 1½ cups pumpkin puree
- ¼ cup agave syrup
- ¼ cup sunflower oil
- 1 teaspoon vanilla extract
- ½ cup sorghum flour
- ½ cup rice flour
- ½ cup oat flour
- ½ cup arrowroot powder
- 1 teaspoon baking soda
- 1 pinch salt
- ¼ teaspoon ground cardamom
- ¼ teaspoon ground cloves
- ½ teaspoon cinnamon powder
Method
- Mix the flax seeds with the cold water, then add the pumpkin puree, agave syrup, oil, and vanilla
- Mix well then stir in the flours, arrowroot powder, baking soda, salt, and spices
- Mix very well then spoon the batter into your muffin pan lined with muffin papers
- Bake the muffins in a preheated oven at 350°F for 20-30 minutes until they rise and turn golden brown
- Remove the pan from the oven when ready and allow the muffins to cool in the pan
