Ginger-Spice Brownies Recipe

Ingredients

Makes 12 brownies

  • 1¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 3 tablespoons unsweetened cocoa powder
  • 1/2 cup vegan semisweet chocolate chips
  • 1/2 cup chopped walnuts
  • 1/4 cup canola oil
  • 1/2 cup dark molasses
  • 1/2 cup water
  • 1/3 cup sugar
  • 2 teaspoons grated fresh ginger

Method

  1. Preheat the oven to 350°F
  2. Grease an 8-inch square baking pan and set aside
  3. In a large bowl, combine the flour, baking powder, baking soda, salt, ground ginger, cinnamon, allspice and cocoa
  4. Stir in the chocolate chips and walnuts and set aside
  5. In medium bowl, combine the oil, molasses, water, sugar and fresh ginger and mix well
  6. Pour the wet ingredients into the dry ingredients and mix well
  7. Scrape the dough into the prepared baking pan
  8. The dough will be sticky, so wet your hands to press it evenly into the pan
  9. Bake until a toothpick inserted in the center comes out clean, 30 to 35 minutes
  10. Cool on a wire rack 30 minutes before cutting
  11. Store in an airtight container
