Flounder With Crab Stuffing Recipe

Ingredients

  • Serving Size : 6
  • 6 Pan dressed flounder – fresh or frozen
  • crab stuffing – see recipe.
  • 1/3 cup lemon juice
  • 2 teaspoons salt
  • 3/4 cup melted butter – or margarine

Method

  1. Paprika
  2. Thaw frozen fish.
  3. Clean, wash and dry fish.
  4. To make a pocket for the stuffing, lay the fish flat on a cutting board, light side down.
  5. With a sharp knife cut down the center of fish along the backbone from the tail to about 1″ from the heat end.
  6. Turn the knife flat and cut the flesh along both sides of the backbone to the tail allowing the knife to run over the rib-bones.
  7. Place fish in a single layer on a well greased baking pan, 15x10x1 inch.
  8. Stuff fish loosely.
  9. Combine remaining ingredients and mix well.
  10. Brush fish with sauce.
  11. Bake in a moderate oven, 350 degrees, for 25 to 30 minutes or until fish flakes easily when tested with a fork.
