Ingredients
Makes 4 To 5 Servings
This Is Vegan.
- 1 tablespoon olive oil
- 1 medium red or yellow onion, thickly sliced
- 1 large red bell pepper, cut into ¼-inch-wide strips
- 1 large yellow bell pepper, cut into ¼-inch-wide strips
- 1 large green bell pepper, cut into ¼-inch-wide strips
- ¼ teaspoon salt
- 1 teaspoon minced garlic (1 good-sized clove)
Method
- Place a large (10-to 12-inch) heavy skillet over medium heat
- After about a minute, add the olive oil and swirl to coat the pan
- Turn the heat to high, and add the onion
- Cook for 3 minutes, or until the onion begins to soften
- Add the bell peppers, salt, and garlic, and cook for about 1 minute
- Then turn the heat down to medium, and continue to cook and stir (tongs work best) for only about 5 minutes longer
- The peppers should be barely cooked
- Serve hot, warm, or at room temperature
