Ingredients
Makes a good 2 cups (4 servings)
Total Time 10 minutes
- 1 large cucumber, peeled and grated (about 2 cups)
- 1 cup plain Greek yogurt
- 2 or 3 garlic cloves, minced
- 1 tablespoon tahini (sesame paste)
- 1 tablespoon fresh lemon juice
- ½ teaspoon salt, or to taste
- chopped fresh parsley or dill, for garnish (optional)
Method
- In a medium bowl, stir together the cucumber, yogurt, garlic, tahini, lemon juice, and salt until well combined
- Cover and chill until ready to serve
- Right before serving, sprinkle with chopped fresh parsley or dill, if desired
