Ingredients
- 1 1/2 pounds ricotta cheese, drained through cheesecloth to remove moisture
- 2 cups powdered sugar
- 3 eggs
- 1 1/2 teaspoons vanilla extract
- 1/2 teaspoon almond extract
- 1/2 teaspoon rum flavored extract
- 1 tablespoon grated lemon zest
- 1/4 cup fresh lemon juice
- 1 tablespoon grated orange zest
Method
- Preheat oven to 400F
- In a medium bowl, combine ricotta, powdered sugar and eggs
- Stir in all extracts, lemon juice and both zests until thoroughly combined and creamy
- Pour into a greased, 9 inch springform pan
- Bake for 40 minutes, until golden
- Cool completely
