Easy Bran Muffins Recipe

Ingredients

  • Serving Size : 12
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 2 tablespoons sugar
  • 2 cups Kellogg’s bran flakes cereal
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons vegetable oil

Method

  1. Stir together flour, baking powder, salt and sugar.
  2. Set aside.
  3. Measure bran flakes cereal and milk into a large mixing bowl.
  4. Stir to combine.
  5. Let stand 1 to 2 minutes or until cereal is softened.
  6. Add egg and oil to cereal mixture.
  7. Beat well.
  8. Add flour mixture, stirring only until combined.
  9. Portion batter evenly into 12 greased 2 1/2 inch muffin pan cups.
  10. Bake at 400 degrees for 25 minutes or until lightly browned.
