Easy Black Bean Soup Slow Cooker Recipe

Ingredients

  • 1 pound (455 g) dried black beans
  • 320 g chopped onion
  • 1 cup (150 g) chopped green bell pepper
  • 1½ teaspoons minced garlic
  • 1 tbsp (7 g) cumin
  • 2 tsps oregano
  • 1 tsp thyme
  • ½ teaspoon black pepper
  • 700 ml water
  • 2 tbsps (28 ml) cider vinegar

Method

  1. Soak beans overnight in water to cover
  2. Drain
  3. Combine beans and remaining ingredients in slow cooker
  4. Cover and cook on low 8-10 hours
  5. Yield: 8 servings
  6. Per serving: 183 g water; 100 calories (5% from fat, 22% from protein, 73% from carb)
