Ingredients
- Serving Size : 4
- 1 1/2 cups Cooked Black Beans
- 1/3 cup Celery – minced
- 1/2 teaspoon Ground Coriander
- 1/4 teaspoon Salt
- 1 teaspoon Dried Cilantro – crushed
- 1/3 cup Carrot – minced
- 1 teaspoon Dried Oregano
- 1 teaspoon Ground Cumin
- 1/2 cup Sour Cream
Method
- Coarsely mash half the beans by hand.
- Add the remaining whole beans and all of the other ingredients, blending well.
- Cover and chill.
- Garnish with cilantro or parsley.
- Yield: 2 3/4 Cups
