Date And Walnut Cake Recipe
Ingredients
Servings : 4-6 dishes.
- 1 2/3 cups whole wheat flour
- 1/4 cup all purpose flour
- 1/2 cup coconut oil
- 3/4 cup sugar
- 1 cup soy milk
- 1 cup water
- 1 cup dates, pitted
- 1/2 cup walnuts
- 1 teaspoon instant coffee
- 2 tablespoons cocoa powder
- 1/4 cup cocoa nibs
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 pinch of salt
Method
- Grease or line with parchment paper a 9 inch round pan
- Pour the milk into a small saucepan and bring to the boiling point
- Remove from heat and stir in the instant coffee and cocoa powder
- Add the pitted dates and let it stand for 20 minutes
- In a bowl, mix the flours with the baking powder, baking soda and a pinch of salt
- Add the sugar then pour in the milk and dates, the water and oil
- Mix well then fold in the walnuts
- Pour the batter into the prepared pan and bake in a preheated oven at 350F for 50 minutes
- Serve sprinkled with powdered sugar
