Curried Chicken With Tomatoes Slow Cooker Recipe

Ingredients

  • 1 can (28 ounces, or 785 g) no-salt-added diced tomatoes
  • boneless skinless chicken breasts, cut in half
  • 1 cup (160 g) coarsely chopped onion
  • ½ cup (75 g) chopped green bell pepper
  • ½ cup (65 g) chopped carrots
  • ½ cup (50 g) chopped celery
  • 2 tbsps (12 g) curry powder
  • 1 tsp turmeric
  • ¼ teaspoon black pepper
  • 1 tbsp (13 g) sugar

Method

  1. Combine all ingredients in slow cooker
  2. Cover and cook on high 2 to 3 hours or on low 5 to 6 hours
  3. Yield: 6 servings
  4. Per serving: 213 g water; 110 calories (9% from fat, 45% from protein, 46% from carb)
