Ingredients
- 6 boneless, skinless chicken thighs
- 3 1/2 cups of homemade chicken bone broth
- 1/2 of a large white onion – chopped
- 4 large cloves of garlic – smashed
- 1 1/2 cups shredded carrots
- 4 cups of chopped kale
- 1 1/2 tsp parsley
- salt and pepper to taste
Method
- Place the chicken pieces in the crock pot and top up with the chopped onions
- Toss in the garlic and pour the broth around the ingredients
- Allow to cook for about 6 hours on low until the chicken is fork tender
- Shred the meat with a fork
- Toss in the carrots, parsley, and kale and adjust seasonings with salt and pepper
- Cook for another hour or a little more
