Ingredients
- 2 lbs boneless skinless chicken breast (about 6 6oz chicken breasts)
- 3 cups finely chopped spinach
- 2 roasted red peppers, chopped
- 1/4 cup sliced black olives
- 1 cup chopped artichoke hearts
- 4 oz. reduced fat feta
- 1 tbsp oregano, chopped
- 1 tsp garlic powder
- 1.5 cups chicken broth
- salt and pepper
Method
- Place the chopped spinach, roasted peppers, artichoke hearts, oregano, feta, garlic powder, salt and pepper in a bowl and mix well
- Rub the meat pieces with the above mixture and season well
- Crate a deep slit in the middle of the breast pieces ensuing not to separate the pieces
- Insert the vegetable mixture into the slits and place in the crock pot with the stuffed side facing upwards
- Pour the chicken broth over the breast pieces and allow to cook for 4 hours on low
- Ensure the chicken is cooked fully prior to serving
