Ingredients
- 1.5-2 lbs. chicken (boneless, skinless thighs AND breasts)
- ¾ cup coconut milk
- 2 Tbsps. tomato paste
- 3 garlic cloves, minced
- 1 tbsp ground ginger
- 4-6 Tbsps. curry powder
- 2 bell peppers, chopped into 1 cubes
- 1 yellow onion, thinly sliced
- salt and pepper, to taste
- 1 cup chicken broth
Method
- Whisk together coconut milk, Tomato paste, ginger, garlic, curry powder, salt and pepper
- Add the bell pepper and onions after
- Then add the chicken and pour the broth over it
- Mix the ingredients together and make sure that the curry mixture covers the chicken completely
- Cover and cook for 4 to 5 hours on high or 6 to 8 hours on low
- Serve
