Ingredients
Makes 12 muffins
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup sugar
- 1/4 cup soy milk
- 1/4 cup applesauce
- 2 tablespoons canola oil
- 1 large Granny Smith or other tart apple, peeled, cored, shredded
- ¾ cup sweetened dried cranberries
Method
- Preheat the oven to 400°F
- Lightly oil a 12-cup muffin tin or line it with paper or foil liners and set aside
- In a large bowl, combine the flour, baking powder, cinnamon and salt
- In a separate large bowl, combine the sugar, soy milk, applesauce and oil and blend until smooth
- Stir in the apple and cranberries
- Add the wet ingredients to the dry ingredients and stir until just blended
- Transfer the batter to the prepared muffin pan
- Bake until golden brown and firm to the touch or until a toothpick inserted into the center of a muffin comes out clean, about 25 minutes
- Let cool for 5 minutes
- Serve warm
