Crapple Muffins Recipe

Ingredients

Makes 12 muffins

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 1/4 cup soy milk
  • 1/4 cup applesauce
  • 2 tablespoons canola oil
  • 1 large Granny Smith or other tart apple, peeled, cored, shredded
  • ¾ cup sweetened dried cranberries

Method

  1. Preheat the oven to 400°F
  2. Lightly oil a 12-cup muffin tin or line it with paper or foil liners and set aside
  3. In a large bowl, combine the flour, baking powder, cinnamon and salt
  4. In a separate large bowl, combine the sugar, soy milk, applesauce and oil and blend until smooth
  5. Stir in the apple and cranberries
  6. Add the wet ingredients to the dry ingredients and stir until just blended
  7. Transfer the batter to the prepared muffin pan
  8. Bake until golden brown and firm to the touch or until a toothpick inserted into the center of a muffin comes out clean, about 25 minutes
  9. Let cool for 5 minutes
  10. Serve warm
