Cranberry-Carrot Salad Citrus-Walnut Vinaigrette Recipe

Ingredients

Makes 4 servings

  • 1 pound carrots, shredded
  • 1 cup sweetened dried cranberries
  • 1/2 cup toasted walnut pieces
  • 2 tablespoons fresh lemon juice
  • 3 tablespoons toasted walnut oil
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper

Method

  1. In a large bowl, combine the carrots, cranberries and walnuts
  2. Set aside
  3. In a small bowl, whisk together the lemon juice, walnut oil, sugar, salt and pepper
  4. Pour the dressing over the salad, toss gently to combine and serve
