Cranberry And Pistachio Cookie Recipe

Ingredients

Makes : 3 dozen

  • 1 1/2 cups all purpose flour
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon orange zest
  • 1 cup sugar
  • 1/4 cup orange juice
  • 1/2 cup coconut milk
  • 4 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • 2 tablespoons cornstarch
  • 1 pinch of salt
  • 1 cup dried cranberries
  • 1 cup shelled pistachios, chopped

Method

  1. In a bowl, mix together the flours, baking powder and baking soda, as well as a pinch of salt
  2. In another bowl, mix the coconut oil with sugar, coconut milk and orange juice and zest, as well as vanilla extract and cornstarch
  3. Beat with a hand mixer for 5 minutes then stir in the dry ingredients
  4. Fold in the dried cranberries and pistachios
  5. Form small dough balls and arrange all of them on baking trays lined with baking paper
  6. Bake the cookies in a preheated oven at 350F for 15-20 minutes
  7. Let them cool in the pan then transfer them into an airtight container to store
