Ingredients
Makes : 3 dozen
- 1 1/2 cups all purpose flour
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon orange zest
- 1 cup sugar
- 1/4 cup orange juice
- 1/2 cup coconut milk
- 4 tablespoons coconut oil
- 1 teaspoon vanilla extract
- 2 tablespoons cornstarch
- 1 pinch of salt
- 1 cup dried cranberries
- 1 cup shelled pistachios, chopped
Method
- In a bowl, mix together the flours, baking powder and baking soda, as well as a pinch of salt
- In another bowl, mix the coconut oil with sugar, coconut milk and orange juice and zest, as well as vanilla extract and cornstarch
- Beat with a hand mixer for 5 minutes then stir in the dry ingredients
- Fold in the dried cranberries and pistachios
- Form small dough balls and arrange all of them on baking trays lined with baking paper
- Bake the cookies in a preheated oven at 350F for 15-20 minutes
- Let them cool in the pan then transfer them into an airtight container to store
