Ingredients

mix well:

  • 1 cup white wave soy yogurt
  • 1 cup applesauce (unsweetened)
  • 2 cup turbinado sugar – (2 to 3)
  • 2 teaspoons vanilla
  • 1 cup rolled oats (whole)
  • 2 cups rolled oats (process in food processor to coarse flour)

sift together:

  • 1 cup unbleached flour
  • 1 1/2 tablespoons baking powder
  • 1 1/2 tablespoons baking soda
  • 1 teaspoon salt
  • 2 tablespoons -g egg replacer

Method

  1. Combine mixtures.
  2. The baking soda should react somewhat, making the mass fluffy and easy to stir.
  3. Add more flour until a cookie dough texture is reached 75 cup total).
  4. Add chips or fruit or whatever.
  5. Shape into balls and bake at 375 until browned.
  6. They do brown, they don’t melt around the edges in that weird way that bad cookies do, and were considered entirely successful.
