Recipe for: Gomen Wat

Pressure/Manual (High) Quick Release
- 2 cups frozen collard greens
- ¼ cup chopped yellow onion
- 1 teaspoon minced garlic
- 1 teaspoon paprika
- ½ teaspoon ground turmeric
- ½ teaspoon salt
- 2 cups water
- 1 tablespoon extra-virgin olive oil
- 2 teaspoons red wine vinegar or apple cider vinegar
Method
- In a medium bowl, combine the collard greens, onion, garlic, paprika, turmeric, and salt
- Toss to combine
- Place on a sheet of aluminum foil
- Bring the edges of the foil together and crimp tightly to seal
- Pour the water into the Instant Pot
- Place a steamer rack in the pot
- Place the packet on top of the rack
- Secure the lid on the pot
- Close the pressure-release valve
- Select MANUAL and set the pot at HIGH pressure for 5 minutes
- At the end of the cooking time, quick release the pressure
- In a medium skillet, heat the olive oil over medium heat until shimmering
- Add the steamed vegetables to the pan and cook, stirring, for 2 minutes
- Add the vinegar and toss to coat
