Coconut And Blueberry Ice Cream Recipe
Ingredients
Servings : 2-4 dishes.
- 1/2 cup shredded coconut
- 1/2 teaspoon fresh, grated ginger
- 2 cups coconut milk
- 1 teaspoon lemon juice
- 3/4 cup fresh blueberries
Method
- In a bowl, crush the blueberries with a fork then stir in the lemon juice
- Add the ginger, shredded coconut and coconut milk then pour this mixture into the container of your ice cream maker and churn according to manufacturer’s instructions
- When done, transfer to an airtight container and store in the freezer until serving
