Ingredients
Makes 4 servings
- 2 cups water
- 1 cup medium-grind bulgur
- salt
- 3 ripe plum tomatoes, finely chopped
- 1/2 cup minced red onion
- 1/2 cup chopped cucumber
- ¾ cup minced fresh parsley
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice Freshly ground black pepper
Method
- In a large saucepan, bring the water to boil over high heat
- Stir in the bulgur and lightly salt the water
- Cover, remove from heat and set aside until the bulgur softens and the water is absorbed, about 20 minutes
- If any water remains, drain it off, pressing out any remaining moisture
- Transfer the cooked bulgur to a large bowl and add the tomatoes, onion, cucumber and parsley
- Add the olive oil and lemon juice
- Season with salt and pepper to taste and toss well to combine
- Cover and set aside for at least 20 minutes before serving
